Instructions

  1. Peel the potatoes, cut into pieces and cook in water or broth.
  2. Peel the garlic cloves and cook in milk for 15 minutes. If necessary, add a little milk if the milk boils off too quickly.
  3. Mash the potatoes into a puree, season with salt and pepper and leave to cool.
  4. Puree the garlic.
  5. Whisk egg whites.
  6. Shape the puree into balls. Press a small hole in each ball and pour some of the garlic mixture into it. Roll the balls first in flour, then in egg white and fry in plenty of olive oil so that they are golden brown on all sides.
  7. Tastes great as an accompaniment to meat or fish dishes, to salads or as an amuse.
