Instructions

  1. Boil the potatoes until soft and let them cool. There are also potato leftovers from the day before. Puree with the yeast, honey and water in the food processor. Make sure that the mixture is lukewarm (with the lukewarm potatoes or lukewarm water).
  2. Now knead into a dough with salt, flour and oat flakes in a mixing bowl. Knead the dough well and shape it into a ball, then cover and let rise in a warm place for 30 - 40 minutes.
  3. Preheat the oven to around 180 degrees Celsius.
  4. Knead the dough again with floured hands and then form two small loaves of bread. Place the bread on a baking sheet lined with baking paper and cut 3 or 4 times at an angle. Mix the egg yolks with a little water and brush the bread with it. Sprinkle with oatmeal.
  5. Bake on the second rack from the bottom for about 35 minutes.
