Put coconut milk in a saucepan and warm up. Peel and dice the potatoes and add to the coconut milk. Season with plenty of curry powder. Let the potatoes simmer over medium heat for about 20 minutes. Add the diced vegetables approx. 5-10 minutes before the end of the cooking time (depending on the type of vegetable). Add the vegetable broth according to feeling so that everything can be cooked nicely. Season with paprika powder and lemongrass.
Allow to cool slightly. Makes a plentiful and filling amount for a person.
