- Peel the onions and cut into small cubes. Also cut the bacon into small cubes. Peel the potatoes and cut into thick slices.
- Heat the olive oil in a pan and fry the bacon with onions until translucent. Add the potato slices and fry lightly over medium heat.
- In a bowl, beat the eggs with the salt and a pinch of chili powder. When the potatoes turn brown, add the eggs and cook on one side.
- Using a large plate or lid, turn the omelette and cook from the other side.
- Serve hot immediately.
