Instructions

  1. Peel and dice the potatoes, peel and core a cucumber (works best if you halve it lengthways and scrape out the seeds with a teaspoon) and cut into small pieces.
  2. Peel and chop the onion and sweat in hot oil until translucent. Then add the potatoes, the cucumber and the stock, bring to the boil and then simmer for 20 minutes at a low temperature.
  3. In the meantime, peel and core the second cucumber and cut the halves into slices. Cut the salmon into thin strips and the chives into small rolls. Mix the sour cream with the flour (make sure that there are no lumps).
  4. After the 20 minutes the soup is pureed. Then add the sour cream with the flour. Bring the whole thing to the boil again and then add the second cucumber, salmon and chives. Finally, season a little.
