Fry the finely chopped onions in oil over a low fire until they become shiny. take the pot away from the fire and let it cool down briefly. Then add a pinch of sweet paprika and 1/2 teaspoon tomato paste and stir. Cut the sausage into approx. 1 cm thick slices and add. Peel, wash, dice and add potatoes.
Put the pot back on the stove and add hot water until the potatoes are just covered. Season with salt and pepper and cook covered for about 20 minutes. At the end, sprinkle the freshly chopped parsley on top.
