Instructions

  1. Boil potatoes and two eggs. Peel the potatoes and cut into thin slices. Peel the eggs and cut into cubes with the egg cutter. Peel and quarter the apple and cut out the core. Finely dice the apple, gherkins and Edam. Cut the herring fillets into bite-sized pieces.
  2. For the sauce, beat egg, oil and mustard in a mixer or with a hand mixer to form a light mayonnaise. Or use ready-made mayonnaise. Stir in the yogurt with a spoon. Season well with lemon juice, salt and pepper.
  3. Pour the sauce over the prepared ingredients and mix. Sprinkle with the finely chopped herbs. Let the salad steep for half an hour, then serve.
