Cut the bacon into strips and drain in the hot oil. Add the potatoes, cover and fry for approx. 5 minutes over medium heat. Add the carrots and fry for another 5 minutes. Dice the onion. Clean the mushrooms, add to the pan with the onion and thyme. Fry for about 8 minutes, turning, season with salt and pepper. When the potatoes are done, cover everything with cheese, cover again and let the cheese melt in about 2 minutes.
