Instructions

  1. Peel the potatoes and cut into bite-sized cubes. Heat the oil in a pan, add the potatoes and turn them so that they are completely moistened with the oil. Cover and fry for approx. 20 minutes over low heat until soft. The potatoes can also have a light crust. From time to time to turn.
  2. In the meantime, cut the cherry tomatoes into quarters and add to the potatoes. as soon as these are done. Season everything with salt and pepper, do not turn too much so that the tomatoes don`t disintegrate. Let it get hot in about 3 minutes with the lid closed.
  3. Cut the mozzarella into small pieces and spread over the potatoes and tomatoes in the pan. Scatter oregano on top. Cover and let the cheese melt over low heat.
  4. Green salad goes well with it.
