Peel the apples, cut them into small pieces and cook them in a small saucepan with the water and lemon juice until the apples are soft. Puree the fruit with the remaining ingredients in a blender.
Peel the potatoes and work them into spirals. Heat the vegetable oil in a pan and heat the spirals until the potatoes turn dark brown on the edge. Salt and pepper the potatoes before turning. As soon as the underside is also brown, drain the hash browns on paper towels and serve with the applesauce.
