Instructions

  1. Wash and peel the potatoes and cook them in a saucepan with salted water for about 30 minutes. In the meantime, roast the pumpkin seeds in a pan without fat, then chop.
  2. Peel the onion and garlic, cut into fine cubes and sauté in a pan with 1 tablespoon of oil. Pluck the parsley from the stalks and chop the leaves, add to the onion and garlic mixture with the pumpkin seeds.
  3. Drain and mash the potatoes. Mix the onion mixture with the potatoes and season with salt and pepper. Let it steep for about 20 minutes.
  4. Beat eggs. Shape the potato mixture into small balls and press flat. Turn the balls first in flour, then in egg and finally in breadcrumbs. Heat the remaining oil in portions in a pan. Brown the meatballs in it for about 5 minutes until golden brown.
