Brush and quarter the potatoes. Heat the oil in a pan. Fry the potatoes in it. Continue frying for about 15 minutes. Turn in between.
Clean the peppers and cut lengthways into fine strips. Chop the garlic, finely chop the onion.
Add the onion, paprika and garlic to the potatoes approx. 10 minutes before the end of the roasting time. Season well with salt, pepper and gyros spices.
Pluck the thyme leaves. Add the thyme and olives to the potatoes approx. 3 minutes before the end of the roasting time.
Crumble the sheep`s cheese, sprinkle over the pan. Serve immediately. Serve garnished with chilli pepper and herbs.
