Instructions

  1. Boil the potatoes, peel them, cut them into slices or cubes and then pour the stock over them. Stir every now and then and let it steep for about 15 minutes. Drain the excess broth through a sieve.
  2. Squeeze the garlic clove, mix with the mayonnaise and fold into the potatoes.
  3. Remove the stalks from the rocket and pluck it into small pieces. Cut the tomatoes and spring onions into small pieces and mix with the potatoes with the rocket.
  4. Season the whole thing with salt and pepper and you`re done.
