- Cook the potatoes in salted water, peel them and cut them into slices.
- Peel the carrots and cut or slice them into very thin slices.
- Put the potato slices with corn, kidney beans and carrots in a bowl.
- Season the sour cream with salt, pepper, paprika, chilli and cayenne pepper and pour over the vegetables. Mix everything carefully.
- Goes very well with grilled foods and barbecues, but also as a light snack.
- Also tastes good to people who don`t actually like potato salad!
