Instructions

  1. Boil the potatoes with plenty of salt as jacket potatoes. Hard boil the eggs.
  2. In a bowl, mix the mayonnaise with the sweet mustard and some liquid from the pickled gherkins and the mustard gherkins. Season well with salt, pepper and paprika. Cut the mustard and pickled cucumbers and the boiled eggs into cubes and fold into the mayonnaise.
  3. Let the cooked potatoes cool until lukewarm, then peel, slice and transfer to a large bowl. Season the salad dressing again, season if necessary and pour over the potatoes. Mix well and let stand for a few hours.
  4. Just before serving, season and season again and garnish with a little parsley.
