Heat the oil in a large saucepan, leave the bacon cubes out over medium heat and then remove. Pour in the water or stock, add the potatoes and soup greens, bring to the boil and cook covered over a low heat for approx. 20 minutes.
Then mash the potatoes with a potato masher and strain the soup through a hair sieve or puree with a blender. Add the parsley and season the soup with salt and pepper.
Either heat sausages in the soup or serve chopped meat sausages separately.
