Here is one of my favorite recipes. The recipe comes from the cook in my previous kindergarten. We (the children) loved them and I still enjoy eating them to this day.
Dice the potatoes, soup greens, bacon, carrots and Cabanossi. Fry the bacon, add the potatoes and soup greens. Deglaze with vegetable stock, season with salt and pepper to taste. Cook for about 20 minutes.
Add coriander and creme fraiche, puree with a blender. Add the cabanossi cubes. Garnish with chopped parsley and serve with baguette slices.
