Instructions

  1. Chop the onions, peel the potatoes and cut into cubes, chop the soup greens.
  2. Melt the butter in a large saucepan and fry the onions in it, add the sugar and let it caramelize. Add the soup greens and fry briefly. Deglaze with the white wine. Let the white wine reduce. Pour in approx. 3/4 of the broth. Add the potatoes. Let simmer for 15-20 minutes.
  3. In the meantime, season the sour cream with a little salt, nutmeg, pepper and a little lemon zest and mix. Cut the smoked salmon into strips, cut the spring onions into strips.
  4. Puree the soup with a hand blender. Then add the cream and fill the soup with the rest of the broth until it has a nice consistency. Now season with salt, pepper and nutmeg. Add the spring onions to the soup.
  5. Put the seasoned sour cream in a soup plate and spread smoked salmon strips on top and add the soup.
