Instructions

  1. First peel the potatoes and cut them into large cubes. Also dice the celery, slightly smaller than the potato cubes. Peel the onion and chop finely.
  2. Heat some oil in a large saucepan and then add the butter. When the butter has melted, fry the potatoes, celery and onions in the saucepan for about 5 minutes.
  3. Meanwhile, peel the carrots and cut them into small pieces, roughly the size of the potatoes. Also cut the leek into small pieces.
  4. Put everything in the saucepan and fry for another 5 minutes. Now fill the pot with water until the vegetables are well covered. Add the bay leaves and a little marjoram and season with plenty of salt and pepper. There is no ready-made stock for this soup, so you shouldn`t be stingy when it comes to seasoning.
  5. Let the soup simmer closed for about 20 minutes.
  6. Meanwhile, dice the poultry sausage and chop the parsley. Add both at the end of the soup.
