Instructions

  1. Peel and finely mash the potatoes, then mix with the remaining ingredients and beat the dough until it bubbles. Let stand for 10 minutes, then beat again vigorously. Press the dough in portions through a spaetzle press into boiling salted water. Rinse the finished spaetzle once under cold water, drain and toss in a little butter in the pan before serving.
