Boil the potatoes, peel them and cut them into bite-sized pieces or slices.
Make a medium sear from the flour, onion and butter. To do this, cut the onion and fry it properly with the butter. Then add the flour and stir well so that no lumps form. Then add the vegetable stock and a small dash of cream to this mixture, stirring constantly. Add the bay leaf and simmer gently for about 20-30 minutes. Stir occasionally.
Then add the potatoes and mix well with the sauce. Now season the sauce with cream, salt and a dash of vinegar and heat again for about 5 minutes.
Portion: One serving corresponds to a small side dish for one person.
