First peel the pears and apples, quarter them, remove the core and cut the pulp into small cubes. Melt the sugar in a saucepan, let it caramelize a little and then deglaze with the apple cider or apple juice. Add the fruit and let cook, covered, for 15 to 20 minutes. Use the blender to finely puree any pieces or just leave them as they are.
Peel the cooked potatoes and press them through a press. Beat the eggs with the sugar until frothy, stir in the potatoes, milk, quark and flour. Now bake golden-brown waffles one after the other in a heated and greased waffle iron.
Dust with powdered sugar and serve with the pear and applesauce.
