Instructions

  1. Whisk eggs, salt, pepper, add a little grated nutmeg. Add all vegetables except tomatoes and stir well. Mix in the flour. Heat the oil in a pan, fry the buffer.
  2. Arrange the cut tomatoes on plates, add the buffer, serve while warm.
  3. If you like, you can sprinkle any kernels and seeds over the tomatoes. Makes the whole thing even healthier.
