Potatoes and Fish Baked in the Oven Instructions

  1. Soak saffron in 60 g boiling water. Boil the potatoes in their skins in salted water for 15 minutes, then drain. Peel the slightly cooled potatoes and cut them into slices.
  2. Meanwhile, in a large cast-iron skillet, heat the olive oil, add the onions, and fry over medium-low heat, stirring occasionally, for about 10 minutes. Then add the garlic and cook for a couple of minutes.
  3. Turn on the oven to preheat to 190 degrees. Lightly grease a 2-liter ovenproof dish with vegetable oil and put half of the boiled potatoes into it in one layer. Put half of the onion on the potatoes, salt, and pepper.
  4. Put fish fillets on the onion, and put thyme and bay leaf between fillet pieces. Put the tomato slices on top of the fish and the remaining fried onions on top. Put the potatoes in the final layer.
  5. Pour the contents of the form with orange juice, white wine, and soaked saffron. Add salt and pepper to taste. Place the dish in a preheated oven and bake the fish in the oven with potatoes for about 30 minutes until the fish is done.
