Press cooked, peeled potatoes through the potato press while still hot. Add the flour, Parmesan cheese and the egg to the cooled potatoes and work them into a smooth dough. Mix in the herbs and spices.
Form cakes from the dough, press a cube of mozzarella into each one (make sure that each mozzarella cube is completely covered with dough). Bake golden yellow on both sides in hot oil.
