Peel the shallot, chop it finely and sweat it in hot oil until translucent. Sweat the spinach briefly, stir in the crème fraîche, season with salt, pepper and nutmeg. Then fold in the finely diced cheese.
Beat the egg in hot clarified butter and let it set over medium heat.
Peel the jacket potatoes while they are warm and place on a plate. Put the spinach and cheese on top, finally put the fried egg on top and serve.
