Instructions

  1. Clean the green beans and cook them al dente in plenty of salted water (preferably with savory, if available). It is better to leave it a little crunchy, as they will come back on the baking sheet later. Scrub the potatoes and cut into approx. 2 cm cubes. Peel, halve or quarter the onions and cut into not too thin (0.5 cm) slices.
  2. Squeeze the garlic into a bowl, add the 2 teaspoons of salt and stir vigorously. Then add the oil and stir well. Also add the potatoes and onions, mix. Place the potato and onion mixture on two oiled baking sheets and bake in the preheated oven at 220 ° C until they are nicely browned and almost cooked through. This takes differently depending on the type of potato and stove, approx. 10 minutes as a guide.
  3. Now add the cooked beans to the bite and put them back in the oven for about 10 minutes. If you like, you can turn on the grill and let the beans also take some color. Finally season strongly with freshly ground pepper.
  4. Variation: add lean bacon diced into small pieces with the beans (then of course it is no longer vegetarian), and / or cocktail tomatoes. Or a chopped pepper with the potatoes.
  5. A dip made from Greek yoghurt, stirred until smooth and seasoned with pepper, salt and a hint of garlic also tastes very good with it!
