Peel and chop the onion and garlic. Clean, wash and dice the peppers, zucchini and aubergine. Pat the meat dry and cut into bite-sized pieces. Heat the oil in a saucepan and sauté the onion and garlic until translucent. Add the turkey fillet and fry. Add the bell pepper, zucchini and aubergine and fry until the vegetables are just firm to the bite. Stir in the tomatoes and vinegar and simmer for 10 minutes, stirring occasionally. Season with salt, pepper and the herbs.
