Puree two bananas with the hand blender. Stir in the two eggs. For the single household, just take a banana and an egg. Now place cranberries, amaranth, nuts, sesame, sunflower seeds, linseed and the like in a chopper and chop as you like. Add to the mass. Now add the oatmeal until the mixture is a little thicker and more malleable. If the oat flakes run out, you can also add a little flour. If the whole thing is not sweet enough, either add more cranberries or help with honey, stevia, agave syrup or the like. Using a spoon, place in thick blobs on a baking sheet lined with baking paper and shape something with the spoon until they are roughly round. For me they are about 5 cm in diameter and about 1.5 cm thick. Now cut the third banana into slices and place a slice of banana on each biscuit. For me there are usually 12 pieces. Bake in the oven at 180 to 200 ° C for about 20 minutes. The finished power cookies can be stored in a cookie jar and last for at least three days. They are good as a quick breakfast or as a power snack before strenuous activities. We like to take them with us for hiking.
