Instructions

  1. Halve, core and peel the avocado. Cut the pulp into small pieces, drizzle with lime juice and puree.
  2. Finely chop the shallots and garlic and mix with the brunch. Season to taste with salt and cayenne pepper.
  3. Pour avocado cream into spoons or bowls. Pluck the lettuce leaves into small pieces. Garnish with prawns and cress.
  4. Roasted baguette and rosé sparkling wine go well with this.
