Preheat the oven to 200 ° C. Wash the potatoes well and - depending on the size - cut in half or quarter lengthways. Mix with olive oil and salt and place in a baking dish. Cook in the oven (center) for approx. 30 minutes, turning occasionally. In the meantime, wash and clean the vegetables and cut into bite-sized pieces. Peel the garlic and cut into very fine slices. Add everything to the potatoes and season with salt and pepper. Cook for another 25 minutes, turning in between and fold in the herbs of Provence during the last turning process.
