Cut circles out of the puff pastry with a glass. Put some fresh goat`s cheese on each of the circles with a teaspoon (not too much, otherwise it will run out during baking). Now drizzle a little honey on the cheese as needed. Now fold the circles over and press the edges into place. Brush the cheese pockets with egg yolk and place on a baking sheet lined with baking paper.
