Instructions

  1. Roll out the puff pastry and place in a mold or possibly a baking sheet. The edge should be at least 2 - 3 fingers wide. Preheat the oven to 220 degrees top / bottom heat or 200 degrees circulating air.
  2. Cut the bacon into strips if it has not already been diced. Peel the onions and cut into cubes. Fry both in a little fat. Take the pan off the hob.
  3. Whisk the 4 eggs, the crème fraîche, the cream and 50 g cheese. Then salt and pepper the mixture. The whisked mass is now added to the bacon and onions in the pan and mixed. Now put everything on the puff pastry in the mold. Finally, sprinkle the remaining 50 g cheese over it. Bake in the oven at 220 degrees top / bottom heat or 200 degrees convection for 40 minutes. If the surface gets too dark, simply cover it with some aluminum foil.
  4. A green salad goes very well with this quiche.
  5. If you like, you can also add vegetables to the quiche. Simply add to the egg mixture.
