Either grease the quiche pan or line it with parchment paper. Roll out the dough and place in the quiche pan and prick the dough several times with a fork.
Wash the zucchini and cut into slices. Dice the onion. Heat the olive oil in a pan and sauté the zucchini and onion briefly and season with salt and pepper. Spread the zucchini and onion mixture on the dough base. Wash the peppers, remove the core, cut into strips and spread over the zucchini mixture. Also cut the mozzarella into slices and spread over the vegetables.
Mix the eggs and cream, season to taste and pour over the zucchini, paprika and mozzarella mixture.
Bake the quiche in the hot oven for about 40 minutes on the lowest rack.
