  1. First let a coated pan get as hot as possible. The best way to test this is to squirt some water into the pan, which then immediately evaporates with a hiss. Now add 1 teaspoon - 1 tablespoon of amaranth to the hot pan. Do not add too much amaranth at once, otherwise some of the grains will start to burn while the other part is still popping. It is best to cover the pan with a lid, as the small amaranth grains jump very high when the shell bursts. With 1 teaspoon - 1 tablespoon of amaranth it takes about 20 - 30 seconds for all the grains to be puffed. Put these in a bowl to cool down and puff the next spoonful of amaranth. If you want, you can sweeten the puffed amaranth with honey or sugar (dissolved in a little water). How sweet you want it to be is up to you. Put the honey or dissolved sugar in a saucepan, add the puffed amaranth and heat, stirring well. When everything has combined, put the mixture back into a bowl and let it cool, stirring again from time to time. Puffed amaranth can be eaten as muesli with yoghurt or milk, it is also delicious with fruit or sprinkled over a salad. Whatever you like. It is definitely very healthy and rich in protein and iron.
