Wash, peel and cut the potatoes into pieces about 2 cm in size. Heat 2 tablespoons of oil in a large pan and fry the potato pieces over medium heat for about 20 minutes.
In the meantime, wash the pumpkin, hollow it out and cut it into 2 cm pieces. Wash the leek too and cut into rings. Heat 2 tablespoons of oil in another pan and fry the pumpkin cubes and the leek for about 15 minutes, until everything is soft and golden brown.
Chop the walnuts with a kitchen knife and add about 3 minutes before the end of the cooking time. Finally, mix the ingredients from both pans, add the goat cheese and rocket and season with salt and pepper.
