Peel and roughly dice the carrots and pumpkin. Rinse the broccoli and cut into florets, cut the stalks into small pieces.
Heat the sesame oil in a saucepan, add the vegetables and fry for about 5 minutes. Deglaze with the coconut milk. Season with curry powder, salt and a little pepper and simmer for approx. 15 minutes. Roast the coconut chips in a pan and pour over the curry.
