Pumpkin Casserole Cake in the Microwave Instructions

  1. Peel the pumpkin from seeds and peel, grate on a coarse grater. Add sugar to taste. Wait a bit for the pumpkin to let out the juice. Add black pepper and salt to taste – Without them, the pumpkin flavor will not fully develop. Mix. add milk and zest and stir. I have a zest of 1 orange since only 1 piece was left “alive” at home, and so on to taste. Add eggs, stir. Add sifted flour, stir, give a min. 10 to disperse the gluten in the flour. The dough is liquid in appearance – something between the dough for pancakes and pancakes. I quenched the baking soda with homemade apple cider vinegar if you don’t have a table one. (I use baking soda with vinegar only because there was no fresh baking powder at home.) Stir.
  2. The bottom of a microwave oven pot can be greased with a small amount of butter or vegetable oil, but since the dough was too thin, I did not do this time.
  3. Bake at full power with the lid closed until tender. I have 850 W., but the voltage in the mains is 195 V, so it was baked for about 16 minutes. About two minutes before completion, open the lid to form the top crust.
  4. Since it cooks faster in the microwave near the walls, check the readiness in a valuable container.
  5. Wet part of the towel, wipe the bottom and walls of the pan for the microwave oven with it (it is easier to remove). Knocked over on a plate. Mine does not really like sweets – so I just sprinkled it a little with powdered sugar. For the cooling period, I took a plate with a cake in a sarafan bag. So the top layer does not dry out too much. After cooling, it could be cut into cakes and smeared with something. But whoever wants it, let him do it.
  6. It would be possible to add steamed raisins, dried apricots, dates, etc. to the dough. Any fried nuts are also appropriate. Instead of orange peel, you can use any other or a mixture of them, or do without them.
  7. You could add some tomato juice and some boiled rice. Then the sweet components are removed and the result is quite close to the casserole – pumpkin puree soup. If you want, try it. And there are many other options. Think – do yours.
