Sauté the onion, garlic, chilli in oil until translucent, sprinkle vigorously with curry powder, add pumpkin cubes. Season with the chicken stock, deglaze with apple juice and coconut milk, cook. Puree with the hand strainer.
If it is too thick (pumpkin thickens), simply dilute it with a little water or apple juice. If you want something more substantial, you can serve rice or add cooked, diced chicken. Pineapple cubes are also good in it.
