Wash the Hokkaido and cut into bite-sized cubes. Do not remove the peel, then the pumpkin will have more bite. Also cut the apples into bite-sized cubes, but remove the peel. Fry both in a (preferably) wok pan with the olive oil. Add the chives, salt and pepper. Cut chili peppers and add if necessary (chili flakes are just as good as chili peppers). Finally deglaze with red wine.
An ideal dish when things have to be done quickly. It tastes best with rice or couscous.
