Instructions

  1. Put the goat cheese (room temperature), honey, olive oil, apple cider vinegar and lemon juice in a bowl. Mix everything together until well combined. I have to say that I have a very creamy cheese here, the consistency of which is like cream curd. Season the dressing with salt and pepper.
  2. Now cut off the long, upper part of the butternut squash, peel and halve. Use the round base for something else.
  3. I now take an insert on my grater, where I can get thin pencils out of it. Then take the long side of the pumpkin and grate it into long, thin pencils. You can of course do this with a sharp knife. Add the pumpkin sticks to the bowl for dressing and mix. Serve on a salad plate with a few cranberries.
