Instructions

  1. Line a terrine dish with a capacity of approx. 1 l with cling film.
  2. Separate the eggs and beat the yolks well with 3 tablespoons of sugar and vanilla sugar, stir over steam until creamy, add the rum and stir cold.
  3. Beat the egg white with the remaining 4 tablespoons of sugar until creamy and also whip the whipped cream until creamy. Now alternately fold the egg white and whipped cream into the yolk mixture. Halve the mixture and fold the chopped pumpkin seeds under half. First fill the pumpkin seed mixture into the terrine dish and freeze it for 1/2 hour if necessary. Then pour the vanilla mixture on top and freeze for about 12 hours.
  4. Remove the parfait from the mold, cut into slices and serve with a little pumpkin seed oil.
