Instructions

  1. Finely chop the onion, garlic, fry the grated ginger, lemongrass, chilli and lime leaves in oil.
  2. Add the diced pumpkin with coconut milk and deglaze with the stock. Then season with salt and star anise, cover and simmer until the pumpkin is soft.
  3. Remove lemongrass, anise and lime leaves, possibly also chilli (if you don`t want it to be so hot).
  4. Puree the soup finely and serve with chopped coriander.
