- Finely chop the onion, garlic, fry the grated ginger, lemongrass, chilli and lime leaves in oil.
- Add the diced pumpkin with coconut milk and deglaze with the stock. Then season with salt and star anise, cover and simmer until the pumpkin is soft.
- Remove lemongrass, anise and lime leaves, possibly also chilli (if you don`t want it to be so hot).
- Puree the soup finely and serve with chopped coriander.
