Mix the gelatine with the water, let stand for 10 minutes to swell, heat while stirring until everything has dissolved and chill.
Gradually stir the quark through a sieve with the milk, sugar, lemon zest and juice and then add the lukewarm gelatin solution. Whip the cream until stiff, sweeten with the vanilla sugar and fold into the quark mixture. Pour the cream into a glass bowl, chill to set and decorate with cherries.
