Instructions

  1. For the dumplings:
  2. Mix the quark, egg, vanilla sugar, sugar, flour and the grated lemon peel and let this mixture swell for approx. 10 minutes. Bring lightly salted water to the boil and use two tablespoons to cut the dumplings from the mixture. Let it steep in boiling water for 10 minutes. Then let it cool down.
  3. For the strawberry purée:
  4. Save 1/3 of the berries for the garnish and puree the rest. Season to taste with the sugar and lemon juice. Frozen fruits can be used very well, but mixed berries can also be used. However, pass these through a sieve as they have many small seeds.
  5. Pour a mirror of berry puree on dessert plates (put small dots on top with a little whipped cream and draw lines with a wooden skewer).
  6. Place the dumplings on top and garnish with some of the berries that have been held back.
