The potatoes should be from the day before. Press this through a press. Mix the quark, egg, flour, sugar, raisins and a pinch of salt together with the potatoes using a hand mixer.
The dough should be easy to remove from your fingers if you want to shape the quark pods beforehand. If the mixture is still too moist, add a little flour.
Now the oil in the pan must be heated to a medium level. Use a sufficient amount, do not fry but fry in deep fat.
Using a large tablespoon, add the batter to the pan. Immediately afterwards I turn the mass and flatten it about 1 cm. This saves me the trouble of shaping, the fat allows the mass to be flattened without sticking. Bake the quark pods for about 3 minutes on each side until golden brown.
Sprinkle with cinnamon and sugar to eat, best served warm. But we also love the quark pork chops cold as a snack. Applesauce also goes well with it.
