Instructions

  1. For the dough, knead all the ingredients with a dough hook. The dough is laid out in a springform pan and prebaked for about 8 minutes over medium heat.
  2. For the filling, the onions and mushrooms are cut into slices. Both are steamed in the butter. Whisk the eggs, cream, flour and the spices, mix with the cheese, add to the mushrooms and onions and spread on the dough. Tomato slices are distributed in a wreath on top.
  3. The quiche is baked for another 20-30 minutes at 200 degrees Celsius, until the egg mixture has set.
