Instructions

  1. Put the flour and salt in a bowl, make a well in the middle and pour in the cold water. Add the butter in cubes and knead everything into a dough. Wrap the dough in foil and let it rest in the refrigerator for a good hour.
  2. Cut the bacon and onions into small cubes, toast in a pan with the butter. Add the garlic, spinach and tomatoes cut into strips and remove the pan from the stove.
  3. Mix the eggs, sour cream and goat cream cheese together, season with salt, nutmeg and pepper. Pour this mixture into the pan and mix it with the spinach mixture.
  4. Roll out the dough on a work surface dusted with flour, place it in the mold and press lightly. Put the goat cheese and spinach mixture on the dough and distribute evenly. Depending on your taste, you can sprinkle some grated cheese on top, but it tastes good even without that final whistle. Bake in a preheated oven at 180 ° C for a good 30 minutes with convection with bottom heat. Let cool down a little before slicing, so the mass doesn`t fall apart.
