Instructions

  1. For the dough mix the flour with baking powder and salt, then mix with the eggs and the room-temperature margarine with the mixer. Let the dough cool in the refrigerator for 15 minutes. Meanwhile preheat the oven to 180 ° C (top / bottom heat).
  2. In the meantime, prepare the filling. First dice the onion, garlic, mushrooms and peppers and sauté in a pan with a little olive oil. Also add the corn and steam it for a while. Now season the vegetables with the spices, salt and pepper. Also spicy with chilli flakes!
  3. Prepare the mixture in the pan and then spread the dough into a greased springform pan with a diameter of 24 cm or a small sheet cake tin. The base should be very thin, otherwise it will only taste like dough later!
  4. Now distribute the vegetable mixture evenly on the dough. Then spread the diced feta cheese on top. Finally, season the cream with the eggs, salt and pepper and a few spices to taste and mix. Pour the whole thing into the mold over the vegetable mixture so that everything is covered!
  5. Cover the quiche with the grated mozzarella and place in the oven (middle rack) for about 30 minutes. The quiche is ready when the mozzarella has a light brown color.
