- Grate, halve and squeeze 2 limes. Mix the zest with the juice, add the cream, stir in and season with salt and pepper.
- Cut 1 lime into slices for decoration.
- Fry the fried fish on both sides in clarified butter until golden brown.
- Put a mirror on each plate with the lime sauce. Place the fish on top and decorate with the sauce and the lime wedges. Arrange and serve.
